In "The Lowdown on Low Carbs," Lynne Khater makes some great recommendations for healthy carbohydrates. One of the food items she mentions is "Millet Bread." You may be wondering...what is millet? Gluten-free, millet has more iron than any other grain. It helps balance blood sugar levels and is one of the few grains that is alkaline. Here's one of my favorite main-dish recipes, which just happens to include millet.  Enjoy, Samantha.

Mexican Millet

1 1/2 cup vegetable stock
1/2 cup millet
1 teaspoon cumin
1 tablespoon olive oil
1 red onion, chopped
1 green pepper, chopped
1 red pepper, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon dried thyme
12 ounces bean sprouts
3-4 small tomatoes coarsely chopped
3/4 cup water
1/4 cup fresh parsley
Tortillas (i.e. sprouted wheat)

Vegetable stock is typically sold frozen in an un-diluted form.  I typically buy a brand named Take Stock.  To dilute, I allow the container to thaw.  I pour it into a large 4-cup measuring cup, and add water as instructed on the package.  When diluted, you’ll have a total of three cups of vegetable stock.  You’ll have enough for two batches of Mexican Millet, so I just put half in the freezer ready for next time.

In a two-quart saucepan over medium heat, bring the stock, millet & cumin to a boil. Reduce heat to low, cover and simmer 35-40 minutes or until millet is tender. Check frequently and add additional water if liquid cooks away before millet is tender.  Remove from heat and let stand 10 minutes. 

Warm oil in three-quart saucepan, add onion, pepper and garlic.  Cook, stirring four-five minutes. Stir in chili power, paprika, thyme and cook for 1 minute. Add the bean sprouts, tomatoes, water and parsley. Stir in the millet. Partially cover and simmer 5 minutes or until heated through.  Then, I usually turn the heat down to low and let it continue to cook up for another 10-15 minutes.

Serve in warm tortillas (sprouted wheat tortillas make an excellent choice).  Add salsa as desired.
